Documentation: update gcc compiler to 10.3

Update the gcc compiler to 10.3-2021.10 to be able to compile the latest NuttX version

Fix for error:
arm-none-eabi-g++: error: unrecognized command line option '-std=gnu++20';
did you mean '-std=gnu++2a'?
